This organic Chinese oolong tea from the Wuyi mountain area of Fujian province has chocolate-brown leaves that brew a deep tawny brown liquor with exceptionally smooth flavor and satisfying finish. Use 1 generous teaspoon of leaf per 6-ounce cup. Pour spring water at a temperature of 80° to 90° C. (180° to 195° F.) over the leaves, steeping two to three minutes. This tea can be resteeped.
