The artist has used a green recycled water bottle that is fused at 1465° F for about 9 hours from start to finish. She then uses a trade secret method to reattach the original label and create a finish that is glass hard without burning up the lable. Havarti cheese is partly inspired by the Tilsit cheese, which was developed in the 1870's in Tilsit, a town in East Prussia. Traditionally the cheese is aged on rye straw and occasionally brine washed, which contributes t its Characteristic aroma of an old, humid cellar. The rind may show many colorful molds (white, yellow and red), a result of the wild grasses that the Salers cows eat during summer and autumn. The texture is semi-soft often with small eyes in the paste. The flavor is a wonderful combination of a summer pasture and sweet, fruity milk flavors.
