Brie de Nangis hails from Brie, just southwest of Paris, France, and is one of the milder, more buttery Bries. Brie de Nangis is creamy and smooth and has a slightly chalky center that becomes runny with age.

An "unstabilised" Brie, this is a living cheese that ripens like fruit with ageing. When young it has a firm centre which slowly softens to melt at the cut edge when ripe. The young delicate flavour strengthens with ripening to a hint of mushroom, while the exterior mould may die back and mottle. Made with pasteurised cows milk.

Brie de Nangis was originally an artisan cheese made in the town of the same name. Though no longer produced there, it remains true to the original style. It is much smaller than its bigger sibling, Fromage de Meaux, but shares many of the same texture and flavor characteristics.
